

It is an earth salt, in opposition to the sea salts that we are used to consuming. This rock salt, or mineral salt, is composed of a pink glitter crystalline structure. This pinkish hue is due to its iron content. It is considered to be the purest salt in the world.
It is cut and delicately extracted by hand in mines in the heart of the Himalayan mountains, in Pakistan, in the Punjab, more precisely in the Khewra mines, in the heart of the cashmere region, hence its name "diamond salt of Kashmir". It is then transported on the back of yaks to India where it is disseminated all over the world.
It can be used everywhere, like a classic salt. It is slightly less salty than a "fleur de sel" but more than a classic sea salt. Its dry structure means that the crystals will pass very well in a salt mill and the fine salt diamonds can be used in any of in your dishes.
