In the Middle Ages, it was common for monks to specialise in the medicinal properties of plants and herbs. The rhizome, as the underground branch root is still called today, was also used in the fight against plague.

To obtain powdered ginger, the rhizome is first dried and finely ground. It then retains its characteristic spiciness but the lemony note disappears.

A pinch of ginger powder also embellishes the house specialties of: rolls, bread, gingerbread, ginger cookies, confectionery and chocolates, pudding, jams, compote. Even pancakes have a little extra taste with this special spice.
