The Beluga Royal caviar comes from the Huso Huso sturgeon, a species native to the Caspian, Black and Azov seas. It can reach a maximum length of 8 meters for a weight of more than 1.5 tons.
It is the rarest and most expensive quality of caviar, characterised by large eggs (greater than 3 millimetres), oval in shape and colour ranging from pearl gray to dark gray.
It has a particularly subtle taste. It takes an average of 20 years to obtain this caviar.
