The Royal Siberian caviar comes from the Siberian sturgeon, a species native to the river basins of Siberia (from Ob to Kolyma and Lake Baikal). It is a medium-sized fish, ranging from 8 to 40kg.

Its extremely eclectic caviar, with a rather pronounced taste, has dimensions that vary according to age (from 2.2 to 2.7 millimetres), characterised by a colour ranging from gray to amber.
