

Delicately fruity.
This oil is obtained according to the old method of surfacing (affiorato), which consists in picking by hand a very small percentage of oil (around 2-3%) which forms spontaneously on the olive paste before pressing.
The surface oil, not undergoing any extraction force, has a full-bodied appearance, a perfect harmony between aroma and taste.
Ingredients : 100% Extra Virgin Olive Oil
Origin : From the north of Bari, from Apulia, "La Fenice- Coppa Malva", localities belonging to the Galantino family.
Olive varieties : Coratina, Ogliarola, minor varieties.
Harvest : by hand until December 31st.
Colour : golden yellow with olive green reflections.
Palate : delicately fruity, with a light aroma and herbal notes

For baked, steamed, grilled or marinated fish, seafood, white meats, salads and delicate dishes.
