Tradition caviar comes from the white sturgeon, a native species to North America, from Alaska to Baja California. It is among the longest-living sturgeons: they can live up to a hundred years old, weigh up to 800 kg and grow 6 meters in length.
In addition to its lean and high protein flesh, it is particularly appreciated for its generous production of large eggs, 2.9 to 3.4 millimeters, characterized by a colour ranging from dark gray to black.
