A RENEWED TRADITION
Every day, at dawn, fresh milk is collected.
After rigorous controls, after pasteurization, with the addition of rennet and natural whey graft, the milk curdling takes place, where natural maturation is expected.
By turning with boiling water after cutting or "cutting" (from which it takes its name) the mozzarella is finally created. With the addition of the filling, the cream and the strips, the Burrata is obtained. The Mozzarella, produced in the most varied sizes, and the Burrata then follow a cold water bath then are placed in brine.
After the final checks, the products are ready to be packaged.
