The entire production process (including evisceration, maturation, filleting and canning in oil) is carried out in Santoña (Cantabria).
Conservas El Capricho works exclusively with anchovies (engraulis encrasicholus) from the Cantabrian Sea, selected through auction according to their freshness. Then they are matured for a minimum of 12-18 months to guarantee the flavour, texture and colour characteristics of this magnificent product. To guarantee the flavour of the anchovies, salt is added, without excess.
Sunflower oil rich in oleic acid, with a neutral taste and odour, it has a higher amount of fatty acids than conventional sunflower oil. It is highly valued in the restaurant industry due to its rapid liquefaction.
