"The Red Cows" Parmigiano Reggiano is born every day with the Parmigiano Reggiano mother's milk: the Reggiana cattle breed.
In 1200, when the Parmigiano Reggiano was born, the most common indigenous breed in the region of origin was the Reggiana breed, which is why it is called today the mother of the Parmigiano Reggiano.
Parmigiano Reggiano is a P.D.O (Protected Designation of Origin) product.
It is produced exclusive to the provinces of Parma, Reggio Emilia, Modena, Bologna and Mantova, to the left of the Reno river and to the right of the Po river. Here are concentrated the farms where the cows are fed with fodder produced in this area .
Animal feed is produced in accordance with regulations which prohibit the use of silage, fermented food and animal meal.
